SAUTÉED APPLE PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Williamson Estate in Dallas, Texas in 1988. Ingredients:
1 cup flour |
1 teaspoon granulated sugar |
3/4 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 egg lightly beaten |
1 cup buttermilk |
1/2 cup sautéed apples finely chopped |
Directions:
1. Sift together all dry ingredients then make well in middle and add in egg and buttermilk. 2. Combine with a few quick strokes but do not over mix. 3. Heat griddle. 4. Add apples to batter and spoon onto griddle in desired size pancakes. 5. When top of pancakes are covered with air bubbles gently check bottom with a spatula. 6. Once golden brown turn pancake and cook other side. 7. When cooked add to a warmed plate and stack with butter. 8. Serve with your favorite syrup or sprinkled with powdered sugar and nutmeg. |
