Another favorite southern dish.
Ingredients:
a mess of medium summer squash (about 6), sliced
1 medium onion, sliced thinly or diced
a hunk (about 1/4 cup) butter
salt & pepper
Directions:
1. Melt butter in large skillet.
2. Add onion and cook just till tender.
3. Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
4. Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).
5. Add salt and pepper to taste.
