Sautéed Zucchini With Garlic, Chili and Basil |

Crisp zucchini slices get a chili-garlic kick and a scattering of pungent basil in this fast and flavoursome recipe. Ingredients:
3 large zucchini |
2 tablespoons olive oil |
3 clove garlic, finely chopped |
1 red chili pepper, deseeded and finely chopped |
12 leaves basil, finely sliced |
salt and freshly ground black pepper |
4 tablespoons parmesan cheese, freshly grated |
Directions:
1. Cut the zucchini into slices at a slight angle. 2. Heat the olive oil in a large frying pan and fry the zucchini slices for about 2 minutes. 3. Add the garlic and chili and fry a further minute. 4. Sprinkle in the basil, season well with salt and freshly ground black pepper. 5. Transfer the zucchini to a warmed serving dish and scatter over the grated Parmesan. Serve immediately. |
