Sausage With Warm Vinaigrette |

Adaped from a recipe I normally use for brocolli. Really Really good sauce for Italian Sausage. Ingredients:
5 italian sausage |
3 tablespoons olive oil |
3 tablespoons balsamic vinegar |
1 tablespoon dijon mustard |
1 (10 ounce) package frozen spinach |
2 tablespoons butter |
1 teaspoon lemon juice (may be omitted) |
salt and pepper |
parmesan cheese |
Directions:
1. Cook sausage as directed. 2. Remove sausage when fully cooked and set aside leaving your pan on same heat. 3. Mix together oil, viniger, and mustard and put in pan. 4. Deglaze the pan with a whisk breaking up the mustard till sauce is even, scraping up all the dark pieces. 5. Place sausage back in pan, cover with sauce, remove from heat and keep warm. 6. Cook spinach as directed. 7. Melt butter with lemon juice and mix with spinach. 8. Season with salt and pepper. 9. Serve sausage over spinace with sauce and parmisean cheese. |
