Sausage with Eggs: Chorizo con Huevos |

Ingredients:
1/2 pound chorizo sausage, removed from casing |
1/2 cup salsa |
6 eggs |
salt and freshly ground pepper |
Directions:
1. In a medium saucepot on medium-high heat, cook the sausage. While cooking the sausage, break it up with a wooden spoon. Once the sausage is thoroughly cooked, add the salsa. Cook the sausage and salsa mixture for 2 minutes. Crack all the eggs in a side bowl to catch any egg shells. Beat the eggs with a fork and add to the saucepot. Stir the mixture until the eggs are incorporated and continue to cook for 3 to 4 minutes. Once the eggs are completely cooked, season with salt and pepper and serve hot. |
