Sausage, Vegetable & Tortellini Soup |

We tried this at a sample cart from a food warehouse that sold all of its ingredients. Here's our version with a few modifications. I often add flaxseed meal to my soups and casseroles to increase the fiber. No one in my family has ever noticed it! Ingredients:
1 lb italian sausage |
1 lb cheese tortellini |
2 cups water |
3 cups baby spinach |
1 cup frozen corn |
1/2 cup diced onion |
1 1/2 teaspoons salt |
14 1/2 ounces diced tomatoes |
14 ounces chicken broth |
2 tablespoons italian seasoning |
1 cup carrot, sliced |
1 teaspoon garlic powder |
Directions:
1. Crumble and brown sausage in a large pot over medium heat. Drain fat. 2. Except for the tortellini, add the rest of the ingredients to the pot. Bring to a boil over medium-high heat. 3. Add tortellini to the pot and boil for 3 minutes. Decrease the heat and simmer for 20 minutes. |
