Very hearty and filling soup for the winter time. Full of flavor with tons of garlic and hot red pepper. My favorite soup recipe. Ingredients:
5 cups frozen cheese tortellini |
1 lb hot italian sausage |
2 tablespoons olive oil |
1 3/4 red onions |
10 garlic cloves (more to taste) |
16 cups chicken broth |
2 cups milk |
2 cups dry white wine |
1/2 cup parmesan cheese |
sage |
salt |
pepper |
red pepper flakes |
parsley |
Directions:
1. Heat oil in stockpot. 2. Add sausage (defrost if necessary), chopped onions, and garlic. Cook on medium until sausage is cooked. 3. Once cooked, add wine. Deglaze anything stuck to the bottom of the pot. 4. Add half the chicken broth and heat to simmer. 5. Add milk and Parmesan cheese, stir to dissolve. 6. Add remaining chicken broth. 7. Simmer for 20-30 minutes. 8. Add tortellini and simmer soup until cooked (approximately 30 minutes). 9. Ready to serve. |
