Sausage Stuffed Mushrooms |

From A Love Affair with Southern Cooking. If you only have mild sausage add in a couple of dashes of cayenne pepper. Ingredients:
24 mushrooms, wiped clean |
8 ounces spicy sausage |
1 small garlic clove, finely minced |
1 tablespoon finely minced scallions or 1 tablespoon chives |
1 small egg, beaten |
2/3 cup soft white breadcrumb |
1/2 teaspoon soy sauce |
Directions:
1. Preheat the oven to 350°F 2. Stem the mushrooms and set the caps aside. Coarsely chop the stems. 3. Cook the sausage, stems, garlic, and scallion until the meat is lightly browned, making sure to break up any large lumps of sausage. Remove from heat and cool for 15 minutes, then, mix in the egg, bread crumbs, and soy sauce. 4. Mound the sausage mixture into the mushroom caps and arrange in a ungreased baking dish. 5. Bake for 10 to 12 minutes or until bubbling and browned. |
