Sausage Stew With Red Lentils |

My healthier version of a current Zaar recipe Ingredients:
1 1/2 cups red lentils |
1 lb hot italian turkey sausage |
14 ounces sweet corn, drained |
1 medium onion, chopped |
4 celery ribs, chopped |
5 cups water |
1/4 teaspoon black pepper, freshly ground |
1/4 cup pearl barley |
Directions:
1. Brown sausage over medium heat with onions and celery breaking them into small pieces. 2. Pour in the water, add pepper, corn and lentils. Stir all the ingredients, bring to a boil over medium heat, stirring occasionally. 3. Reduce heat, cover and simmer for 1 hour, stirring from time to time to prevent the lentils from sticking or burning. Add barley after about a half hour, then remove lid and simmer the other half hour. |
