An old time favorite from my grandmother who made this alot during tough times. So delicious and easy to make. A very hearty meal. Ingredients:
1 1/2 lbs italian sausage, cut into 1 inch slices (sweet or hot) |
4 large potatoes, cut into 3/4 inch cubes |
1 onion, sliced small |
1 garlic clove, minced |
1 tablespoon salt |
1 teaspoon black pepper |
1 lb frozen peas |
1 teaspoon olive oil |
Directions:
1. 1. In a dutch oven, drizzle in a little olive oil and brown the sausage until almost cooked. 2. 2. When almost cooked, stir in onions and garlic and cook for 30 more seconds. 3. 3. Leaving everthing in, fill the pot with cold water until 2/3 full. Bring to a boil and deglaze. Add potatoes, salt and pepper. Boil 2 minutes and reduce to low heat. 4. 4. Simmer on low boil until water reduces to 1/2 pot. Add frozen peas and simmer for at least 15 more minutes. 5. 5. Salt and pepper to taste. |
