Modified from a Cooking Light recipe - delicious! Ingredients:
10 ounces sweet italian sausage |
1 cup chopped onion |
2 teaspoons minced garlic |
1/2 cup water |
1 (15 ounce) can soybeans |
1 (14 1/2 ounce) can diced petite tomatoes |
3 (42 ounce) cans chicken broth |
2 cups chopped baby spinach |
1 tablespoon chopped fresh basil |
2 teaspoons chopped fresh oregano |
2 tablespoons grated romano cheese |
Directions:
1. Remove casings from sausage. Cook it in a large sauce pan until browned, stirring to crumble. add the onion and garlic, cook for 2 minutes. 2. Stir in water, beans, tomatoes, broth. Cover and bring to a boil. 3. Remove from heat, stir in spinach, basil and oregano. 4. Sprinkle each serving with grated Romano cheese. |
