Sausage-spinach-pancake Bake |

Originally classified as a quiche, I took the liberty of altering its class to a bake . Basically, it's a small-size breakfast casserole! Ingredients:
2 tablespoons oil |
12 ounces sausage, your choice |
1 medium onion, chopped |
1/4 teaspoon dried oregano |
oil, if needed |
10 ounces frozen chopped spinach, thawed and drained |
6 ounces cheddar, shredded |
8 large eggs |
1 1/4 cups milk |
1/2 cup buttermilk baking mix |
Directions:
1. Grease and 11x7 pan. 2. Preheat oven to 375 degrees F. 3. Cook sausage, onion and oregano together in two tablespoons of oil until sausage and onions are cooked. 4. If sausage is dry, add a little oil to the mixture. 5. Remove pan from heat. 6. Stir in spinach and cheese. 7. Whisk together the eggs, milk and baking mix. 8. Spoon sausage mixture into prepared pan. 9. Pour the egg mixture on top. 10. Bake for 35 minutes OR until set. |
