I love a good pot of soup
Ingredients:
7 three cheese and pepper sausages cut in 1/2 inch pieces
3 garlic cloves chopped
1 sm onion chopped
1 cup mushrooms chopped
1 lg can crushed tomatoes
1 red bell pepper chopped
1 zucchini chopped
1/2 cup sweet peppers chopped
1 jalapeno pepper seeded and chopped
2 or 3 celery ribs chopped
1/2 tsp nutmeg
1tsp basil
salt and pepper to taste
2 4cup boxes vegetable stock
cornstarch and water to thicken to your liking.
Directions:
1. Saute sausage, onion, and garlic in heavy stockpot for 4-5 min.
2. Add mushrooms, tomatoes, peppers, zucchini, celery and seasonings. Cook for 2-3 minutes.
3. Add stock. Bring to a boil then reduce heat, cover and simmer for 20-30 minutes.
4. At this time you can decide if you want it a little thicker, and add cornstarch mix.
