I got htis out of Family Circle Magazine while back. I really enjoyed it. Ingredients:
2 tablespoons olive oil |
1 cup chopped onion |
1/2 lb of crumbled hot italian sausage, skin removed |
8 ounces sliced mushrooms |
1 1/2 cups arborio rice |
1/2 cup white wine |
1 (14 1/2 ounce) can beef broth |
1 (16 ounce) jar marinara sauce |
2 cups water |
1 cup frozen peas |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 cup shredded parmesan cheese |
1/4 shredded fresh basil |
Directions:
1. Heat 2 tablespoons olive oil. 2. Add chopped onion , sausage and mushrooms. Saute 6 minutes. 3. Add Aborio rice; cooke one minute. 4. Add white wine and cook 1 minute. 5. Add beef broth, 1 jar of marinara sauce, 2 cups of water, peas and salt and pepper. 6. Bring to a simmer. 7. Cover; bake at 350 for 20 minutes. 8. To serve, stir in parmesan cheese and basil. |
