This recipe came from the Country Casseroles Cookbook. Ingredients:
1 lb pork sausage |
1 cup sliced celery |
1/2 cup chopped onion |
1/4 cup chopped sweet red pepper |
1/4 cup chopped green pepper |
1/2 cup sliced fresh mushrooms |
1 (8 ounce) can sliced water chestnuts, drained |
1 cup uncooked converted rice |
2 cups chicken broth |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Preheat oven to 350 degrees,. 2. Brown sausage in a heavy skillet over medium heat, transfer sausage to a 2 1/2 quart greased casserole dish. 3. In the sausage drippings, saute celery, onion, sweet red pepper, green pepper and mushrooms until lightly browned, turn into casserole. 4. Add water chestnuts, rice, broth, salt and pepper to casserole, mix well. 5. Cover and bake at 350 degrees for 1 to 1 1/2 hours or until rice is fluffy and tender. |
