Sausage Potato And Cabbage Soup |

This is a favorite throw-it-together soup from the mind of Jacques Pepin who is one of my favorite chefs of all time. It cooks in a mere 45 minutes but tastes heaven and is even better the next day. This dish cries out for slabs of a good, heavy bread. Ingredients:
1 pound hot italian sausage, uncased and broken up |
1 1/2 cups chopped onion |
6 chopped scallions |
6 cups water |
1 to 2 pounds potatoes, diced |
4 cups coarsely chopped green cabbage |
1 teaspoon salt |
1 minced garlic clove |
Directions:
1. Brown sausage well in bottom of soup pot. 2. Add onions and scallions and cook for 1 minute. 3. Stir in water, potatoes, cabbage and salt. 4. Bring to a boil. 5. Reduce heat and simmer for 45 minutes. |
