SAUSAGE PEPPER JACK BREAKFAST MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the O’Dell Estate in Fate, Texas in 1997. Ingredients:
1 pound sausage browned and drained |
6 eggs |
1 cup all purpose baking mix |
2 cups half and half |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
2 cups grated pepper jack cheese |
Directions:
1. Place drained sausage evenly in muffins tins which have been sprayed with cooking spray. 2. Mix eggs, baking mix, half-and-half, salt and pepper together then pour evenly over sausage. 3. Top with grated cheese and bake at 350 for 25 minutes. |
