An oldie but goody that DH requests frequently. Easy quiche recipe. I put it in breakfast/brunch category but we usually have it for dinner. Ingredients:
1 pound pork sausage (we prefer one of the spicy/zesty ones) |
1 medium onion, chopped |
1/2 cup finely diced celery |
1 1/2 cups shredded cheddar cheese |
3 eggs, beaten |
1 cup half-and-half |
2 tablespoons flour |
1/2 teaspoon salt |
1/2 teaspoon paprika |
unbaked 9 inch pie shell |
Directions:
1. Partially cook sausage. Remove from pan and keep 2 tablespoons of rendered fat in the pan for the next step. 2. Saute onion and celery in the reserved fat for 2-3 minutes. 3. Put with sausage and cheese into the pie shell. 4. Mix remaining ingredients and pour into the shell. 5. Bake in 400 degree oven for 30 minutes or until browned and filling is just set. 6. Cool 10 minutes and serve. |
