Sausage, Lentil, and Barley Soup |

A very hearty soup for chilly nights. I like to serve this soup with cornbread. Ingredients:
1 lb polish sausage (kielbasa) |
3/4 cup onion, chopped |
1 clove garlic, minced |
2 (16 ounce) cans stewed tomatoes |
4 cups beef broth (i use beef bouillon and water) |
1/4 cup uncooked barley (not quick cooking kind) |
1/2 cup uncooked lentils |
1/2 teaspoon salt |
1 teaspoon dried basil |
2 cups diced potatoes |
1 cup sliced carrot |
Directions:
1. In large pot, cook sausage and onions until onions are soft. 2. Add all other ingredients and bring to a boil. 3. Reduce heat and simmer soup, covered, about an hour or until potatoes and carrots are tender. |
