Sausage Kale Soup

Ingredients:
1 lb bulk pork sausage
2 medium onions, chopped
2 tablespoons olive oil
2 garlic cloves, minced
43 1/2 ounces chicken broth
2 cups water
3 chicken bouillon cubes
1/2 lb fresh kale
3 medium potatoes, peeled and cubed
31 ounces kidney beans, rinsed and drained
Directions:
1. In a 5-quart Dutch oven over medium heat, cook sausage and onion in oil for 5 minutes or until sausage is browned. Drain.
2. Add garlic and cook for 1 to 2 minutes.
3. Add broth, water, bouillon, and kale and bring to a boil.
4. Reduce heat, leaving the cover ajar and simmer 1 hour.
5. Add the potatoes and cook for 15 minutes.
6. Add the beans and cook until potatoes are tender and beans are heated through.
