Classic cajun dish featuring spicy rice & sausage Ingredients:
2 tablespoons canola oil |
4 garlic cloves, minced |
1 cup onion, chopped |
1/2 cup green bell pepper, chopped |
1/2 cup celery, chopped |
1 lb smoked sausage, sliced thin |
1 (14 1/2 ounce) can diced tomatoes, undrained |
1 cup fat-free chicken broth |
1 teaspoon kosher salt |
1/2 teaspoon dried thyme |
1/3 teaspoon cayenne pepper |
1 bay leaf |
1 cup uncooked rice |
1/2 cup scallion, chopped |
Directions:
1. Heat oil in large pot. 2. Add garlic, onion, bell pepper, and celery. Cook 5 minutes, stirring often. 3. Add sausage. Cook 3 minutes, stirring often. 4. Add tomatoes (undrained), broth, salt, thyme, cayenne pepper and bay leaf. 5. Bring to simmer and cook 10-15 minutes, stirring often. 6. Add additional salt & pepper if desired. 7. Stir in rice and bring to boil. Reduce to simmer and cover. 8. Cook 20-25 minutes until the rice is done. Stir often. 9. Add scallions and fluff with fork. |
