Sausage Ham Egg Casserole |

Simple casserole, goes great with home fried potatoes or even wrapped in a tortilla with salsa! Ingredients:
1/2 lb. hot crumble sausage |
1 cup diced ham |
1/2 cup diced red bell pepper |
1/3 cup diced green onion |
1 clove garlic, minced |
2 teaspoons red pepper flakes |
1 teaspoon dry mustard |
salt and pepper, to taste |
6 eggs |
1 1/2 cup milk |
5 slices of bread, torn into pieces |
1 cup shredded cheese (i use monterey jack/colby) |
Directions:
1. Preheat oven to 350 degrees 2. Begin cooking sausage in skillet, when almost done, add in ham, bell pepper, garlic, onion and red pepper flakes, cook until veggies are tender crisp and sausage is cooked thoroughly. 3. Beat eggs, milk, dry mustard and salt and pepper together. 4. Grease casserole dish and lay torn bread pieces in bottom of dish. 5. With a slotted spoon, spoon out sausage mixture and put into egg mixture, mix well. 6. Pour over bread pieces evenly. Top with shredded cheese. 7. Bake for 30 minutes in preheated oven, until slightly browned and when a knife inserted in center comes out clean. 8. Serve hot, reheats very nicely! |
