Sausage Gravy And Biscuits

This dish can be made as spicy as you like to suit your taste. Also use the biscuit recipe separately for your bread for any meal.
Ingredients:
for biscuits
2 cups self-rising flour ( sifted )
1 teaspoon sugar
1/3 cup crisco® all-vegetable shortening
3/4 cup plus 2 tablespoons buttermilk
melted butter
or melted margarine
for gravy
• 3 cups milk
• 6 tablespoons all-purpose flour
• salt and pepper, to taste
• 8 ounces breakfast sausage, regular or spicy
• 2 3/4 cups biscuit mix
• 3/4 cup milk
Directions:
1. 1. Heat oven to 450 degrees F. In large bowl, combine flour and sugar; mix well. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs. Add buttermilk; stir with fork until soft dough forms and mixture begins to pull away from sides of bowl.
2. 2. On lightly floured surface, knead dough just until smooth. Roll out dough to 1/2-inch thickness. Cut with floured 2 1/2-inch round cutter. Place on ungreased cookie sheet.
3. 3. Bake at 450 degrees F. for 12 to 14 minutes or until golden brown. Brush with melted butter. Serve warm.
4. TIP To substitute for buttermilk, use 2 1/2 teaspoons vinegar or lemon juice plus milk to make 3/4 cup plus 2 tablespoons.
5. Don't overwork the dough, rather fold and knead gently.

8. Whisk together the 3 cups milk, flour, and salt and pepper, until flour is dissolved. Pour into a skillet. Simmer, stirring constantly, for 15 minutes. Brown sausage in separate skillet, stirring and breaking up until cooked through; drain.
