This yummy frittata is a hit with the kids, and it's simple to make! It's also a great budget meal, at just $2.10 a serve. Chipolatasare small sausges. If you can't get them, use regular sized thing sausages, and cut them in half after you cook them. From recipes + magazine, January 2009. Ingredients:
400 g beef chipolata sausages |
1 medium red onion, finely chopped |
cooking spray |
50 g salami, cut into 2cm pieces |
1 medium red capsicum, chopped finely |
8 eggs |
1/2 cup cream |
1/2 cup tasty cheese, coarsely grated |
1/2 cup flat leaf parsley, chopped |
Directions:
1. Preheat oven to 200°C Lightly grease a 6 cup square casserole dish. 2. Heat a large frying pan over moderate heat. Cook and turn chipolatas for 4-5 minutes or until cooked. Drain on paper towels. Spray onion with oil. Add to pan. Cook and stir for 3 minutes. Add salami and casicum, cook for 4 minutes more or until vegies soften. Transfer to a medium bowl, let cool. 3. Whisk egg, cream, cheese and parsley in a large jug. Stir into onion mixture. Pour into prepared dish. Top with chipolatas. Bake, uncovered, for 30-35 minutes or until mixture is set. 4. To serve, cut frittata into slices. |
