My grandmothers recipe. Sometimes she used cracklings instead of sausage.Whatever she had on hand, she used. Ingredients:
1 lb. pork sausage |
1 egg |
1 3/4 cups buttermilk or whole milk |
2 cups self-rising cormeal |
2 tbsp. self-rising flour |
Directions:
1. Preheat oven to 450 degrees. 2. Partially brown sausage in a large skillet. 3. Reserve 1/4 cup of the sausage drippings. 4. Greased a 10-inch iron skillet and preheat it in the oven, until hot. 5. Combine egg, milk, and reserved drippings. 6. Stir in crumbled sausage, cornmeal and flour, blend well. 7. Pour into preheated skillet. 8. Bake 20 to 30 minutes, or untol done and crusty brown. |
