1/2 tablespoon extra virgin olive oil |
1 1/2 bell peppers |
1 small onion |
8 large eggs |
3 chicken-apple sausages |
2 ounces shredded cheddar cheese |
1/4 cup nonfat milk |
Directions:
1. chop up the peppers and onions. turn on stove to medium heat and saute peppers and onions in olive oil until al dente. meanwhile, chop up the sausages and add to a suitable sized baking dish. once peppers and onions are done, add them to the baking dish. add one ounce (2 tbsp) shredded cheddar cheese (save the other ounce for later). add 8 scrambled eggs to the baking dish and any seasonings you prefer. I used rosemary, thyme, and pepper. 2. bake at 400 degrees for 15-20 minutes until the eggs aren't runny. then turn off the oven and scatter the remaining ounce of shredded cheddar to the top. let sit for 5 minutes to melt the cheese and cool. |
