12 large eggs, lightly beaten |
1/3 cup all-purpose flour |
1/2 teaspoon baking powder |
10 ounces lean pork sausage or 10 ounces turkey sausage, cooked and crumbled |
2 cups shredded monterey jack cheese |
1 1/2 cups low fat cottage cheese |
1/2 lb mushroom, sliced |
Directions:
1. Preheat oven to 375°; butter a 13 x 9 inch glass baking dish. 2. In a large bowl, mix eggs, flour, and baking powder. 3. Stir in the sausage, shredded cheese, cottage cheese, and mushrooms. 4. Pour the mixture into the prepared baking dish and bake, uncovered, for 30-35 minutes, until set. |
