Sausage & Beans With Rice |

Ingredients:
2/3 cup chopped onion |
1/2 cup chopped red pepper |
1 teaspoon minced garlic |
1 tablespoon olive oil |
1 lb smoked sausage, cut into 1/4 inch slices (kielbasa) |
16 ounces kidney beans, rinsed and drained |
16 ounces great northern beans, rinsed and drained |
1 cup instant brown rice |
1 cup vegetable broth |
1/4 cup packed brown sugar |
1/4 cup ketchup |
3 tablespoons corn syrup |
1 tablespoon dijon mustard |
Directions:
1. In a large skillet, saute the onion, green or red pepper and garlic in oil onion is crisp tender. 2. Stir in the remaining ingredients. 3. Pour into a greased 13x9 baking pan. 4. Cover and bake at 350 for 15 minutes. 5. Uncover; bake 10-15 minutes longer or until liquid is absorbed and the rice is tender. |
