Good on a cold night. Ingredients:
4 cups chicken broth |
3 15 oz. cans beans, your choice of kidney, butter, pinto, navy or black-eyed peas. |
3 medium carrots diced |
3 celery ribs, diced |
1 lb. smoked sausage, cut in 1/2 in. slices |
1 large onion chopped |
1/2 cup barley |
1/2 cup dried lentils |
1 tsp. hot sauce |
1 cup chopped fresh spinach |
Directions:
1. In a dutch oven, place all ingredients except spinach. Cover and cook over medium heat for 60-90 minutes or until barley and lentils are tender. Stir in spinach and heat through. |
