Sausage, Bacon, Egg and Cheese Casserole |

Adapted from many different recipes. Ingredients:
12 ounces reduced-fat pork sausage |
6 ounces mushrooms, sliced |
1 (3 ounce) package bacon bits |
12 ounces reduced-fat cheddar cheese, shredded |
16 ounces non fat small curd cottage cheese |
1/4 cup light butter |
1 (20 ounce) package refrigerated diced potatoes with onions |
1 pint egg beaters southwestern egg substitute |
salt and pepper |
Directions:
1. Heat oven to 375 degrees. 2. Coat a 9x13 pan with Pam. 3. Melt butter and mix with the potatoes and onion, then line bottom of prepared pan. 4. Brown the sausage over medium-high heat, adding mushrooms about half way through. 5. Meanwhile, mix cheddar cheese and cottage cheese. 6. Layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan. 7. Pour egg beaters evenly over entire pan. 8. Bake for about an hour, or until a knife inserted in the center comes out clean. |
