Sausage, Apple, and Cheddar Bread Pudding |

This recipe was featured in an email from Cooking Light. This dish is reminiscent of holiday stuffing. Leave the peel on the apple for color and texture. Ingredients:
8 ounces italian turkey sausage |
2 cups granny smith apples, chopped |
1 cup onion, chopped |
2 cups 1% low-fat milk |
1 cup egg substitute |
3/4 cup sharp cheddar cheese, shredded, divided |
1/4 cup fresh parsley, chopped |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
9 cups sourdough bread cubes, day old |
Directions:
1. Preheat oven to 350°. 2. Heat a large nonstick skillet over medium-high heat. Remove casings from sausage. Add sausage to pan; cook for 4 minutes or until browned, stirring to crumble. Stir in apple and onion. Cover and cook over low heat 5 minutes or until apple is crisp-tender. Remove from heat; cool slightly. 3. Combine milk, egg substitute, 1/4 cup cheddar cheese, parsley, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a large bowl, stirring with a whisk. Stir in sausage mixture. Add bread, and stir gently to combine. Let stand 10 minutes. Spoon into a 2-quart baking dish coated with cooking spray. Sprinkle with remaining 1/2 cup cheese. 4. Bake for 45 minutes or until pudding is set and lightly browned. |
