Sausage and Vegetable Frittata |

This recipe is from Woman's Day. Ingredients:
1 tablespoon oil |
8 ounces italian turkey sausage, casings removed |
1 medium zucchini, thinly sliced |
1 large bell pepper (red or green, or combination of both) |
8 large eggs |
4 ounces mozzarella cheese, shredded (1 cup) |
Directions:
1. Heat oil. Add sausage and cook, breaking up chunks, until no longer pink (2 to 3 minutes). 2. Add zucchini and bell pepper and saute 3-4 minutes or until vegetables are tender. 3. Whisk eggs in a bowl until well combined. Stir in cheese. Pour over sausage mixture. Stir gently to distribute eggs. 4. Cook frittata on the stove 4 to 6 minutes until set on the bottom and sides. Heat broiler. 5. Broil 4 to 6 inches from heat source for 2 minutes or until firm in the center. |
