Sausage and Vegetable Frittata

Ingredients:
1 tablespoon oil
8 ounces italian turkey sausage, casings removed
1 medium zucchini, thinly sliced
1 large bell pepper (red or green, or combination of both)
8 large eggs
4 ounces mozzarella cheese, shredded (1 cup)
Directions:
1. Heat oil. Add sausage and cook, breaking up chunks, until no longer pink (2 to 3 minutes).
2. Add zucchini and bell pepper and saute 3-4 minutes or until vegetables are tender.
3. Whisk eggs in a bowl until well combined. Stir in cheese. Pour over sausage mixture. Stir gently to distribute eggs.
4. Cook frittata on the stove 4 to 6 minutes until set on the bottom and sides. Heat broiler.
5. Broil 4 to 6 inches from heat source for 2 minutes or until firm in the center.
