Sausage and Tomato Rigatoni

Always on the lookout for new and simple pasta dishes!! Yet another one to add to my collection. Easy to tweak by adding veggies, using whatever pasta you may have on hand, extra cheese, etc. Could also use ground beef instead of sausage.
Ingredients:
4 cups rigatoni pasta, uncooked (or other tube pasta)
1 lb italian sausage, cut into chunks
1 red onion, sliced
1/4 cup tomato paste
1/4 cup sun-dried tomato dressing
1/4 cup fresh parsley, chopped (optional)
1/4 cup parmesan cheese, grated (optional)
Directions:
1. Cook pasta as directed on package.
2. While pasta is cooking, brown sausage in large nonstick skillet; drain. Stir in onions and tomato paste; cover.
3. Cook 15 minute or until onions are tender and sausage is cooked through, stirring occasionally. Stir in dressing.
4. Toss the sausage mixture with pasta.
5. Sprinkle with parsley and cheese.
6. Serving suggestion - if you want this really cheesy, put into a baking dish and top with mozzarella cheese and throw into the oven for a few minutes until cheese is melty.
