Sausage and Spinach Pasta |

Yummy on a cold day! Drain the sausage well after cooking to keep the calories and cholesterol down. Ingredients:
3 1/2 c whole wheat flour |
1 c eggbeaters |
1 tsp salt |
10 oz chopped spinach |
1 tbsp olive oil |
16 oz sausage, hot |
3 garlic cloves, minced |
1 fresh ground pepper |
1/2 c parmesan, freshly grated |
Directions:
1. Using first 3 ingredients, make pasta per pasta machine recipe, or use ready-made whole grain pasta. 2. Cook the pasta halfway in boiling water and salt. Add spinach and boil another 5-6 minutes. If using fresh pasta, cook the pasta and spinach together for 2 minutes total or until pasta is al dente. 3. At the same time, brown the sausage and garlic in olive oil. Drain well. 4. When pasta and spinach are done, drain and reserve about 1/2 c of the water. 5. Mix the sausage with the pasta and spinach. Add as much water as you need to coat the ingredients without puddling in the pan. 6. Add pepper and salt to taste. Stir in cheese and serve immediately. |
