Sausage and Rice Casserole |

I'm not sure where this came from but I made it years ago and recently found it again. It was always a great tasting dish. Ingredients:
1 lb mild sausage |
1/2 cup butter |
1 cup green pepper, chopped |
1 onion, chopped |
1 (8 ounce) can sliced mushrooms |
1 (2 1/4 ounce) package chicken noodle soup mix |
1 cup rice |
4 1/2 cups water, boiling |
Directions:
1. Fry the sausage and remove from the skillet saving the remaining grease. To the same skillet, add the pepper, onion, butter and mushrooms and saute for 5 minutes. Cook the soup and the rice in the boiling water for 20 minutes. Add all remaining ingredients and serve. If cold, reheat in a 350* oven for 20 minutes. |
