This is from the Sam's Club Chef Meal Solution of the week. Note: you can use cheese ravioli or tortellini in place of the spinach and cheese ravioli. Ingredients:
1 lb italian sausage |
1 lb fresh spinach-cheese ravioli |
2 cups water |
1 (14 ounce) can chicken broth |
1 (14 1/2 ounce) can diced tomatoes |
1 (15 1/4 ounce) can corn, drained |
3 cups baby spinach |
1/2 cup onion, diced |
1 cup carrot, sliced |
1 tablespoon garlic, minced |
2 tablespoons italian seasoning |
1 1/2 teaspoons salt |
1 teaspoon black pepper |
Directions:
1. Use bulk sausage or remove the casings from the sausage and discard. 2. Brown the sausage in a heavy Dutch oven over medium heat, drain off excess fat. 3. Add water, broth, diced tomatoes, corn, spinach, onion, carrots, garlic, italian seasoning, salt and pepper, bring to a boil. 4. Add ravioli to the pot and boil for 3 minutes, then decrease heat to low and simmer for 20 minutes. |
