Sausage and Potatoes Breakfast or Brunch Meal |

This an adapted version of a Rachael Ray´s recipe. Ingredients:
1 lb sausage, sliced (any kind) |
3 medium potatoes (sliced) |
2 tablespoons oil |
1 onion (sliced) |
2 garlic cloves (crushed) |
1 green pepper (diced) |
4 eggs |
1/4 cup milk |
1 pinch thyme |
1 pinch cayenne pepper |
salt & pepper |
Directions:
1. Preheat oven to 350°F. 2. Saute sausages in oil. Transfer to plate when cooked. 3. Cook potatoes, onion, garlic, green pepper and seasonings together in the same pan until the potatoes are tender. (Add oil if necessary). 4. Return sausages to pan. 5. Beat eggs and milk together and pour over mixture. 6. Bake in oven for 20 minutes, or until eggs are cooked thoough. |
