Ingredients:
2 medium carrots, peeled, cut into 1-inch chunks |
4 to 6 medium red or all-purpose potatoes, peeled if desired, cut into 1-inch chunks |
salt and pepper to taste |
1 pound(s) smoked sausage, sliced into bite-size rounds |
1 large onion or 2 medium onions, sliced |
2 tablespoon(s) butter |
1 teaspoon(s) paprika or smoked paprika, or to taste |
Directions:
1. Place carrots and potatoes in a pot and cover with water. Add about 1 tablespoon salt and bring to a boil. Reduce heat and simmer until potatoes are almost but not quite tender, about 5 minutes. 2. Meanwhile, place sausage, onion and butter in a 12-inch skillet over medium heat. Cook, stirring, until onions are slightly softened, about 5 minutes. 3. Drain the potatoes and carrots and add them to the skillet. Add paprika and salt and pepper to taste. Cook, stirring gently until potatoes finish cooking and all of the flavors blend, 2 to 3 minutes. |
