76 g (4 breakfast links) turkey sausage, sliced |
1 1/2 cups onion, diced |
1/2 cup celery, diced |
1/2 cup carrot, diced |
2 tablespoons all-purpose flour |
43 1/2 oz (3 cans) chicken broth, fat-free, reduced-sodium |
4 medium russet potatoes, peeled and diced |
1/2 tsp dried sage |
1/2 tsp ground black pepper |
1 cup lowfat milk |
Directions:
1. Coat a large soup pot with cooking spray. Cook sausage for 2 minutes. Drain off fat. Add onion, celery, and carrots and cook another 5รข??7 minutes or until beginning to brown. 2. Add flour, stirring well. Cook for 2 minutes. Add broth, potatoes, sage, black pepper, and one bay leaf. Bring to a boil, scraping brown bits at the bottom of the pan. Reduce heat and simmer until potatoes are done, about 20 minutes. 3. Add milk and simmer 2 more minutes; do not boil. Remove bay leaf before serving. 4. Notes: Guessed on amount of sausage to bring protein values up to those of the ADA. Fat is correct using a cooked sausage. |
