Ingredients:
1 teaspoon(s) celery seed |
1 tablespoon(s) dijon mustard |
2 teaspoon(s) extra virgin olive oil |
3 tablespoon(s) extra virgin olive oil |
1 clove(s) garlic, minced |
8 ounce(s) kielbasa, sliced 1/4 inch |
1/4 teaspoon(s) pepper |
1 pound(s) red potatoes |
1 1/2 tablespoon(s) red wine vinegar |
1/4 teaspoon(s) salt |
1/4 cup(s) sliced green onions |
Directions:
1. Boil potatoes about 25 minutes or until fork tender. Drain and let cool. Cut potatoes into quarters. In a skillet, heat 2 T of olive oil over medium high heat. Brown the kielbasa. Drain on paper towel. Add kielbasa to bowl with potatoes along with celery seed and onions. For the dressing- whick together vinegar, mustard, garlic, salt, and pepper. Slowly whick in oil. Add dressing to potato mixture while warm. Serve warm or at room temperature. |
