Quick italian pasta Ingredients:
8 ounces rigatoni pasta |
8 ounces sweet italian sausage links |
2 bell peppers, red and green, cut into 1 1/2-inch strips |
1 cup thinly sliced red onion |
1 teaspoon dried italian seasoning |
1/4 teaspoon salt |
1/2 cup bottled creamy caesar salad dressing |
2 tablespoons grated parmesan cheese |
1 tablespoon chopped fresh parsley |
Directions:
1. Cook pasta as instructed. Drain well. Reserve 1/2 c of cooking water. 2. In large nonstick skillet, cook sausage over medium-high heat until browned on all sides (10 mins). Reduce heat to medium-low. Cover. Cook until no longer pink (15 mins). 3. Remove and cool slightly. Discard all but 1 Tbs drippings in skillet. Diagonally cut sausage into 1/4 slices. 4. Add peppers, onion, seasoning and salt to skillet. Cook over medium heat, stirring occasionally until just tender (15-20 mins). 5. Remove from heat. Stir in pasta, dressing, reserved pasta cooking water and sausage. 6. Sprinkle with Parmesan and parsley. Serve. |
