Sausage And Herb Stuffing |

Great substitute for regular high carb stuffing...and this is so delicious. Ingredients:
3/4 lb turkey sausage (can also use pork breakfast sausage) |
1/4 c. finely chopped celery |
1/4 c. chopped red onion |
2 eggs |
2 c. coarsely chopped cauliflower |
1/2 c. diced yellow squash |
1/2 c. grated parmesan |
1 t. chopped parsley leaves |
3 t. chopped fresh sage leaves |
3 t. chopped fresh thyme leaves |
1 t. minced garlic |
1/8 t. salt |
1/8 t. fresh ground black pepper |
Directions:
1. Preheat oven to 350 degrees. 2. Remove sausage from casing and crumble into a pan over medium heat. 3. Add teh celery and noin and cook, stirring, until browned. 4. Drain fat if necessary. 5. Beat the eggs in a bowl. 6. Using a spoon, mix in the sausage mixture and all the remaining ingredients. 7. Pour the stuffing into a 8 inch baking dish. 8. Bake until hot and browned, about 30 minutes. 9. Serve immediately |
