This is another recipe from my Mother-In-Law's collection. I am not a grit fan but, these are pretty dang good as grits go. Ingredients:
1 cup uncooked grits |
1 lb. ground sausage |
1 onion, finely chopped |
2 - 41/2 oz. cans chopped green chilies |
8 t (1 stick) butter |
2 eggs, beaten |
2 cups grated cheddar cheese |
10 dashes hot sauce (i like cholula) |
1 tsp. paprika |
1/2 cup chopped fresh parsley |
Directions:
1. Preheat oven to 325 2. Cook grits in 4 cups salted water until thick 3. Saute sausage, breaking it into small pieces 4. Saute onion in sausage grease and drain 5. Add onion and chilies to sausage 6. Add butter, eggs, cheese and hot sauce to grits 7. Combine the grit mixture with the sausage mixture and pour into a 9 x 13 casserole dish and garnnish with additional small amounts of cheese, chilies, paprika and parsley 8. Bake for 1 hour 9. Can be refrigerated for up to 2 days before baking and it freezes well. |
