Melt in your mouth sausage and eggs with the added twist of the taco sauce. I love these all-in-one breakfast dishes. Ingredients:
1 lb bulk sausage |
1/4 lb mushrooms, chopped |
1 medium onion, diced |
salt and pepper to taste |
3 tbsp sour cream |
8 oz. cheddar cheese, grated |
8 oz. mozzarella cheese, grated |
6 eggs |
6 tbsp taco sauce |
Directions:
1. Preheat oven to 400 degrees. 2. Grease a 9 x 13 baking dish. 3. Combine sausage, mushrooms and onions in skillet. 4. Saute over medium heat until sausage is cooked; season to taste and drain. Put in baking dish. 5. Combine eggs and sour cream in blender and whip 1 minute. 6. Put eggs in the pan and cook until eggs are soft set (about 7 minutes). 7. Add taco sauce to eggs. Mix. 8. Add the egg mixture to the baking dish. 9. Top with a mixture of the 2 cheeses. 10. Bake at 325 degrees for 30 minutes. |
