Sausage and Couscous Salad |

This recipe is delicious served cold, ideal for lunch or supper. Ingredients:
8 ounces couscous |
8 sausages, cooked, cooled and thinly sliced |
4 1/2 ounces dried apricots, finely diced |
2 scallions, finely chopped |
1 tablespoon olive oil |
2 tablespoons balsamic vinegar |
2 tablespoons coriander, chopped |
1 tablespoon mint, chopped |
fresh ground black pepper |
mixed salad green |
lemon wedge |
Directions:
1. Prepare the couscous following the instructions on the pack, but omitting the butter. 2. Allow to cool, then add the sausages, apricots, scallions, oil, vinegar, cilantro and mint. Season to taste. 3. Mix well and serve on a bed of mixed salad leaves with lemon or lime wedges. |
