Sausage And Cheese Breakfast Casserole |

Found a recipe on the side of a package of Jimmy Dean's sausage roll and adapted it to our tastes. Made this for our Breakfast supper last night along with some home fries and grilled corn muffins. Can be made the night before and then throw it in the oven in the morning. Ingredients:
1 lb. hot pork sausage (i used jimmy dean) |
1/2 red bell pepper, chopped |
5 cups bread, cubed |
2 cups sharp cheddar cheese, shredded |
10 eggs, beaten |
2 cups milk |
2 tsp. dry mustard |
1 tsp. salt |
black pepper to taste |
6 scallions, chopped |
note....i thought about adding tomatoes and green chilies but didn't, will next time though. |
Directions:
1. Preheat oven to 325 2. Using non stick spray, coat 9x13 baking dish 3. In skillet, add red pepper and sausage 4. Crumble meat and cook through 5. Set aside 6. In mixing bowl, combine eggs, mustard, milk, salt and pepper 7. Set aside 8. Add 1/2 bread cubes to bottom of baking dish 9. Sprinkle with 1/2 of meat mixture 10. Sprinkle 1/2 of cheese to top of meat 11. Repeat layering with the rest of the bread, meat mixture and then cheese 12. Pour egg mixture evenly over entire casserole 13. Bake 60 minutes uncovered. (Tent with foil if top becomes too brown) |
