For the sausage in this recipe - I used elk/deer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! Yield and time are approximate. Ingredients:
1 green bell pepper, chopped |
1 medium onion, chopped |
1 garlic clove, minced |
1 tablespoon vegetable oil |
1/2 lb fully cooked sausage, cut into 1/4 inch slices |
4 cups chicken broth, i used a quart of homecanned |
1 (16 ounce) can black beans, i used 1 pint homecanned |
1 (16 ounce) can great northern beans, i used 1 pint homecanned |
5 bay leaves |
1 teaspoon dried parsley |
1 teaspoon ground cumin |
3 -4 dashes hot pepper sauce |
hot cooked rice |
Directions:
1. In a large skillet, saute bell pepper, onion and garlic on oil until tender. 2. Add sausage, broth, beans and seasonings. 3. Cover and simmer for 1 hour, stirring occasionally. 4. Discard bay leaves. 5. Serve in bowls over rice. |
