Sausage and Bean Casserole |

Hearty meal for a winters night. Kids love this meal. You can add some chili powder or cayenne pepper for zing! Ingredients:
8 thin beef sausages |
2 large potatoes |
250 g pumpkin |
1 onion |
1 (440 g) can baked beans |
1 beef stock cube |
1 cup water |
2 tablespoons tomato paste |
Directions:
1. Parboil the sausages. 2. Cool and slice diagonally. 3. Heat a frying pan and fry the sausages and chopped onion till onion is clear and sausages are lightly browned. 4. Remove from pan and place in a deep casserole dish. 5. Peel then cube the potato and pumpkin (the size of large dice) and place with sausages along with the baked beans, crumbled stock cube, water and tomato paste. 6. Cover and bake 200 degrees C for 45 minutes. |
