Authentic German sauerkraut! Well worth the wait! Ingredients:
4lbs sauerkraut in a jar ( you will need 2 jars that are 2lbs each) |
2package thick slab back or 2 lb smoked pork butt |
1 large yellow onion cut in half and cut into half rings |
5 peppercorns |
8 juniper berries (wacholderbeeren) |
1 cup high gravity beer ( 7% more alcohol content) |
3 whole bay leaves salt to taste, if need |
2 tsp caraway seeds (kümmel) |
Directions:
1. 1. With a saute pan on medium heat cook the bacon till golden, not crisp. Remove the bacon and let drain on a paper towel. Add the onions to the bacon fat and cook till slightly translucent. Add the peppercorns, juniper berries, beer, and the bay leaves and let simmer for 5 minutes. 2. 2. Transfer the onion mixture,bacon, and the sauerkraut, (with juices), to the slow cooker, and cook on high for 4 hours. Stir occasionally. |
