Sauerkraut Soup

Ingredients:
1 lb smoked polish sausage, cut in 1/2 inch pieces
1 tablespoon oil
5 potatoes, peeled,and diced
2 carrots, chopped
4 (14 ounce) cans chicken broth
1 teaspoon garlic, minced
1/4 teaspoon caraway seed, optional
1/4 teaspoon pepper
1/4 teaspoon thyme
1 (32 ounce) can sauerkraut, rinsed and drained
1 (6 ounce) can tomato paste
Directions:
1. In large pot, brown sausage pieces in oil.
2. Add next 7 ingredients; bring to a boil.
3. Reduce heat, cover and simmer for 20 minutes.
4. Add sauerkraut and tomato paste.
5. Bring back to a boil.
6. Cover and simmer another 15 minutes.
